Some dishes taste more like childhood than others. It’s safe to say that most Americans have some sort of memory of Chicken Noodle Soup, and the loving parents/cooks who served it to them on rainy days. And while those are positive memories, it’s never wrong to find new ways to experience them. That’s where Auntie Nono’s Everything Seasoning comes in.
There’s no need to reinvent the wheel on a classic recipe, but Lana of With a Touch of Luxe thought it could stand a new spin. A former pro ballerina, she’s no stranger to innovation, but, with a family to tend to, there’s not always an abundance of time to experiment. And there’s no easier way to add that savory edge than a few shakes of Everything Seasoning.
To elevate this timeless classic and remember why you loved it in the first place, follow the recipe below for Savory Chicken Noodle Soup.
3 Medium Carrots, peeled and sliced 1/2 inch thick
3 Celery Stalks, trimmed and sliced 1/2 inch thick
2 Bone-in, Skin-on Chicken breasts
3 32oz Boxes of Chicken broth
1 Box of Bite Size Noodles
1/2 Cup Frozen Peas
1/2 Cup Frozen Corn
2 Tablespoons Auntie Nono’s Everything Seasoning (add more to taste)
Directions
In a large pot, heat the olive oil over high heat.
Add the carrots and celery. Cook until softened, about 7 minutes.
Stir in the chicken broth and seasoning. Add the chicken and press to submerge. Bring the liquid to a simmer. Reduce the heat to low, cover pot, and let simmer for 30 minutes, turning the chicken over and stirring occasionally.
Remove lid and cook for another 10-15 minutes until the chicken is fully cooked and the liquid reduced slightly.
Cook pasta in a separate pot according to the package instructions.
Remove chicken to a cutting board and let cool for 5 minutes. Discard the skin and bones and shred meat into bite sized pieces.
Return the chicken, cooked pasta, frozen peas, and frozen corn to the broth and simmer for 5 minutes.
